Rebecca Bullen

Owner

International, glamorous yet distinctly Australian, Bec has brought taste to the tropics, style to go with the sweat. Founder of the iconic and multi- award winning Darwin wine bar Stone House.


With that not keeping her busy enough, Bec has also opened the popular Charlies of Darwin restaurant and cocktail bar and Raintree Lantern Terrace. It is here, on display you can see the distillery set up in all of its glory! 


Bec regularly goes out foraging to harvest Northern Australian botanicals to share with the world.

Fendi Bong

Head Chef

Chef Fendi is the beating heart of the Charlie's of Darwin and has been an instrumental part of the team since he joined us in 2021. Originally from Indonesia, Fendi moved to Sydney when he studied commercial cooking in 2016. His passion for cooking came from his grandma who taught him the basics from a young age. 


Chef Fendi works tirelessly creating our signature 'Feed Me' menu which showcases the freshest local produce the Territory has to offer, whilst combining unique, delicious flavours. 


Fendi's dream is:

To have his own open farm restaurant, along with a small boutique bakery with his wife. 


Fendi's favourite quote is:

Sanjay Man Kasaju

Head Bartender

Our energetic Head Bartender/Mixologist Sanjay with extraordinary customer service skills formulates and serves alcoholic or soft drinks beverages with passion, pleasure, and professionalism. 

Originally from Nepal, Sanjay joined the team back in 2019 before taking over and heading the bar in August 2020.

Sanjay's dream:
To own his own bar one day and give the customers the best nights of their lives with great tasting beverages.
